Chef Vielka has been a vegetarian for 40 years. In addition to being the matriarch of our family, she has been busy over the years creating vegetarian versions of Panamanian classics that are faithful to local cuisine. All of our plant based dishes are vegan and are prepared and stored separately from our meat dishes.
